Today I wanted to tell you about the contest: The Brand New PLANT BASED challenge: I can't believe it's not CHEESE! about making a cheese that looks like cheese but is not made with dairy products, and I decided to present you my proposal. When I imagine cheese, immediately my favorite is yellow cheese, I love it. All types of cheese attract my attention, but I don't eat them much because at this point in my life, I mean age, hahaha, dairy products cause me health problems. Once in a while I buy some and indulge myself, but it is not frequent. So this initiative to create a cheese but without any dairy captivated me. I immediately thought of the yellow color of my favorite cheese and since I always buy yellow peas because I really like their flavor and color, I took the opportunity to do it that way. I said to myself: "I am going to create a yellow cheese based on yellow peas and spices". I spent several days thinking about how to make it, how its texture and flavor would be, until I was able to idealize the recipe and the procedure. Here is my 100% vegan cheese recipe. >>

Hoy deseo a propósito del concurso:The Brand New PLANT BASED challenge: I can’t believe it's not CHEESE! sobre hacer un queso, que parezca como tal pero que no sea hecho con productos lácteos, y decidí presentarles mi propuesta. Al imaginarme queso, de inmediato mi preferido es el queso amarillo, me encanta. Todos los tipos de queso me llaman la atención, pero los consumo poco porque ya a estás alturas de mi vida, es la edad, jajaja, los lácteos me causan problemas de salud. De vez en cuando compro un poco y me doy el gusto, pero no es frecuente. Así que esta iniciativa de crear un queso pero sin ningún tipo de lácteos me cautivó. De inmediato pensé en el color amarillo de mi queso preferido y como siempre compro las arvejas amarillas pues me gustan mucho su sabor y color, aproveché de hacerlo así. Me dije: "voy a crear un queso amarillo a base de arvejas amarillas y especies". Estuve varios días ideando cómo hacerlo, cómo sería su textura y sabor, hasta que ya pude idealizar la receta y el procedimiento. Aquí está mi receta de queso 100% vegano.

250gr yellow peas 100gr or 1 potato 15 grams or 6 cloves of garlic 20gr chive leaves 40gr or 4 tablespoons sunflower oil 30 grams or 1 and 1/2 tablespoons corn flour and white rice flour 30 gr or 1 and 1/2 tablespoons roasted cariaco corn flour (Maicena) 4 gr or 1/2 teaspoon turmeric powder 4 grams or 1/2 teaspoon of dried and ground basil 4 grams or 1 teaspoon of salt. 709ml or 3 cups of water

Primero coloco en un envase las arvejas y las lavo bien. Luego las pongo a remojar por 6 horas. Luego de ese tiempo les voto esa agua del remojo, las vuelvo a lavar y luego las pongo a escurrir en un colador. Después empiezo a molerlas en el molino de maíz que tengo. Ahora después de molerlas obtengo una pasta espesa.

Por otro lado, lavo bien la papa la cortó en 4 partes y la coloco en una olla con agua para sancocharla. Cuando está blanda, saco las partes y para ponerlas a escurrir. Ahora les quitó la piel y comienzo a triturar las partes con un tenedor(puede usarse triturador de papas). Cuando queda el puré listo lo reservo allí para agregarlo a la receta.

En una olla coloco la masa de las arvejas y empiezo a agregarle la sal, cúrcuma, albahaca en polvo y (20gr) o 2 cucharadas de aceite. Empiezo a mezclar todo hasta que se unan todos los ingredientes.

Por otro lado, corto las hojas del cebollín en trocitos, y pelo los ajos y luego los trituro. Coloco una olla en la estufa a fuego medio, le agrego 20gr o 2 cucharadas de aceite. Cuando esté caliente le agrego el ajo y el cebollín que tengo ya cortados. Los mezclo a sofreír un minuto.

Listo el sofrito, echo la masa de arvejas y mezclo con los otros ingredientes. Una ves bien unidos, agrego 2 y 1/2 tazas de agua. Mezclo todo, cambio a fuego bajo la estufa y tapo la olla para que se cocine.Por 10 minutos la cocino, revolviendo con frecuencia la mezcla.

A los 10 minutos agrego la harina de maíz y arroz blanco. También agrego el puré de papas. Mezclo todo y tapo para que se cocine otros 5 minutos más.

En 1/2 taza de agua ahora disuelvo la harina de maíz cariaco blanca tostada ( o si usan Maicena es igual el procedimiento). Está harina hace la función de la Maicena, de dar consistencia a los líquidos. Una vez disuelto, se lo agrego a la olla con la mezcla de arvejas, y revuelvo.

When I see that, I can tell that my cheese mixture is ready. I turn off the stove and immediately pour the mixture into the container where I want it to set. >>

Ahora sigo revolviendo y cocinando por 5 minutos más hasta que se vea que la mezcla se espesa mucho y empieza a despegarse de la olla. Cuando veo eso, ya puedo decir que está lista mi mezcla de queso. Apago la estufa y de inmediato proceso a vaciar en el recipiente dónde quiero que se va a cuajar la mezcla.

Then I take the yellow cheese out of the container. It is ready, consistent, creamy, solid enough to cut and start using. And of course I taste it. Spectacular! >>

Dejo que la mezcla se enfríe a temperatura ambiente y luego llevo a la nevera por 8 horas aproximadamente. Luego saco del recipiente el queso amarillo. Está listo, consistente, cremoso, bien sólido para poder cortarlo y empezar a usar. Y por su puesto lo pruebo. Espectacular!!

El total de tiempo de cocción es de 20 minutos. Al final, el peso total del queso elaborado es de 1 kg. Su sabor es grandioso, tal como lo imaginé, de por sí estas arvejas tienen un sabor delicioso y ahora de esta manera se siente lo cremoso, el acentuado sabor del ajo y cebollín, a la vez que la albahaca hace querer comerlo más.
